Gluten free mackerel and poached egg salad

Quick Gluten Free Supper – Mackerel and Poached Egg Salad

This quick and easy gluten free salad is perfect at any time of the year.

Serves two



2 mackerel fillets

2 eggs

1/2 avocado chopped into cubes

1 tablespoon pine nuts

500g new potatoes

75g cherry or plum tomatoes

Bag of fresh babyleaf salad

1 tablespoon chopped fresh chives


For the dressing

1 tsp olive oil

1 tsp honey

1 tsp Lemon juice

Ground black pepper



1. Boil the new potatoes for ten minutes or until soft

2. Place the mackerel under the grill for ten minutes

3. Poach the eggs for 6 minutes

3. Meanwhile, place the salad onto the plates and scatter the toasted pine nuts, cherry tomatoes and avocado across the top

4. When the potatoes are boiled, drain, stir in the chopped chives and place around the outer edge of the salad

5. Place the warm mackerel in the centre of the salad and top with a poached egg

5. Season with black pepper and dressing
